War Eagle!!

Yesterday Manda and I spent the day cleaning. I think we need to make it a once a week process so we don’t get so behind. lol But anyway, on top of cleaning the Nationwide race was on and my beloved Auburn Tigers were playing. Manda loves when they play. ;P lol Anyway, we got to talking about what sounded good for supper and we needed to get a few things from the grocery store. I told her wait until half time of the Auburn/South Carolina game. Yes, yes, I would be the “guy” in our friendship right then. We had watched an episode of Giada at Home on Food Network one day and she made ravioli in this brown butter sauce. We said that that sounded good, but without the brown butter. We also said that fried ravioli like Olive Garden’s would be great, too, which we have made before. We decided to just make ravioli and Manda made her marinara sauce. Ravioli is simple to make, well, if you buy the frozen kind because homemade pasta in general is a long drawn out process and the frozen taste just the same to me. It cooks about 3 to 4 minutes in boiling water.Β Manda\’s Marinara recipe in case you want to make it from scratch and create it how you would like it. We added fresh mushrooms and spinach to ours and let it cook for a little bit. After the ravioli was done cooking, we just mixed it with the sauce. Also with the ravioli for supper we decided to have a salad with it. We found a recipe for ranch dressing that Guy Fieri made on one of his Guy’s Big Bite episodes on Food Network. Here’s the link if you want to see it and try it out:Β Homemade Ranch Dressing If you can perfect it, it’s a cheap way to make ranch dressing. Could be a money saver tip if you use it quite a bit. Wasn’t just like ranch, but it was good all the same. We didn’t have any buttermilk, but we made our own. How you ask? Well, for every cup of buttermilk that you need, you add a tablespoon of vinegar to a cup of milk and you let it sit for 5 minutes. Thanks to Jamie Deen we learned that little tid bit. Argh….

So, I’m pretty much feeling like crap, have been all day, so I’m downing some orange herbal tea and watching Food Network, waiting for Criminal Minds to come on. WOO HOO…So last night was fun, GLEE premiered, and I know that has nothing to do with food but I must say I was a little disappointed. Songs were good, Puck was good, but I don’t know, it was definitely missing something. Another thing that happened was racecar driver Clint Bowyer was fined and docked points for this past weekends win. (if you didn’t know Clint Bowyer is Morgan’s fave driver.) So needless to say today hasn’t been the best day of the week. Morgan had to work today, which was less than pleasant for her, but she is going to make supper tonight if all goes as planned, and I HATE that I’m not feeling well because she is going to make her cheesy chicken broccoli and rice, and I have to say IT’S AWESOME!!! It is really one of my favorite dishes she makes. Seems like all we are making is comfort food for this blog, but I promise when things get to picking up we’ll throw in some healthier stuff. lol. Hopefully I can somewhat feel better so I can chow down on some of this yummy stuff! πŸ™‚ And as soon as she makes it, if it happens tonight we’ll post the recipe and hopefully some photos for everyone to check out!! πŸ™‚

This post will be a little different then our past two. This one doesn’t talk about a recipe we fixed for dessert or supper. This post is just all about heart. We will probably do something like this from time to time. πŸ™‚

Today was the first race of the Chase at New Hampshire. Manda and I both are race fans and we’ve both been to several races… I know over 25 between the two of us and hopefully many more to come. I take that back, I KNOW there’s more to come! Anyway, my favorite driver is Clint Bowyer and coming into this weekend, he hasn’t won a race this year. In 2007 he was in the same situation and he ended up winning in New Hampshire. Well, Friday, I was feeling deja vu all over again! I knew he was going to have a strong showing. Turns out, I was right!!! Clint ended up winning today; first race win for his crew chief Shane Wilson and it was the first race win for General Mills. In honor of that, I decided to eat a bowl of Cheerios as my dessert tonight.

Up above, is my bowl of Cheerios. I put it in a yellow bowl with a red spoon on purpose. lol Anyway, here’s to Clint, Shane, and all of the 33 crew for a job well done and an AMAZING start to the Chase!!!! πŸ™‚

So for my daddy’s birthday every year he asked for the same thing, this yummy and easy chicken dish that my mom makes. It’s something that as a young adult I can prepare and it feeds a lot of people or tons of leftovers. πŸ™‚Β  So the other night, after a long discussion of what we wanted, Morgan and I decided that would be great!! It is very much like a “comfort” food. It’s hot, creamy, and oh so good. πŸ™‚ Another thing that is good about this recipe is that you can work with ingredients to what you like. For example, when my mom makes this, she cuts back on the onions and carrots because she doesn’t like them, however when I make it I add more because I like them. Also, with the potatoes you can really use your potatoes of choice, for Morgan and I, we like to use red potatoes that are not peeled. So you can really adjust this to your own taste, if you don’t like carrots leave them out and maybe add another potato.

This is my mom, Donna Newgent’s recipe, I’m not really sure where she got it from, but it’s became a favorite at my childhood home and now my college home. πŸ™‚

You will need:

-5 to 7 pieces of chicken, that have been boiled

-5 to 7 medium sized potatoes (Peeled)

-Raw carrots (this is according to preference, for me I use one large raw carrotΒ  sliced, my mom usually tosses in some baby carrots)

-OneΒ  Onion (this can be omitted or again to preference)

-1 can tomatoes (I like to use petite diced tomatoes)

-1 can cream of chicken soup

– Preheat over to 400 degrees. In a deep glass orΒ  oven safe dish, using a paper towel, butter the bottom thoroughly. Slice your potatoes medium thickness, then arrange them in the bottom of the baking dish first. Now on top of the potatoes, layer the carrots randomly, then the chicken, then the onions and finally with a spoon, dip out the tomatoes and put them on top of the chicken ( it shouldn’t cover the whole dish, just in spots). Place spoonfuls of the cream of chicken soup over the chicken, once the can is mostly empty, add a little bit of water to the can, (about 1/4th of the can) mix up then poor over. Put a lid on the dish or cover with tin foil. Bake on 400 degrees for an hour to an hour an a half, or until your potatoes are tender.

*for me I find it better to let it bake the last ten minutes without being covered. πŸ™‚

P.S. Sometimes we don’t use all of a whole onion in a recipe, we find that it really saves money to just dice it up and put it in a zip lock bag and toss it in the freezer. You really can’t tell the difference when cooking with them. πŸ™‚

So Morgan and I cook just about every night of the week, even with going to school, homework, jobs, friends, family, and everything else going on. Most of the time we have the same discussion of “what do we have?”, “what do we want?”, “what sounds good?”, and “Do I really want to move off the couch and cook tonight?”. Being taught how to cook by our families, we know how to cook just about anything, and we are good at improvising with ingredients. However, we do know that most college kids have no clue even how to make spaghetti (:() So we decided to start this blog, because cooking is something we enjoy and thought we would share. πŸ™‚ Hope everyone or anyone who reads this will enjoy!
